So one thing you are probably going to learn about me over here is that I am ADDICTED to pasta. I could eat it for every meal of every day at any time of day. Like this morning, where like many other, I found myself waiting for 12am as in my mind that is the earliest acceptable time to reunite with my semolina-y friend. If you, like me, are in need of your pasta fix and want something easy, quick, and silky with ingredients you're likely to have in your cupboard and fridge without really putting in any effort, I shall know tell you how to do just that.
INGREDIENTS (For one)
150g pasta (or as much as you want)
1 egg (beaten)
2 tbsp grated cheddar
1-2 tablespoons milk
Nutmeg (for grating)
1/4 - 1/2 tsp mustard (not american)
Salt, Pepper, and Smoked Paprika to season
HOW TO MAKE THIS DELIGHTFULNESS
1. Cook your pasta. And in the meantime...
2. Beat your egg into a jug, adding the cheese, milk, and a grating of nutmeg (the amount is totally up to you but it can be quite strong so just add a little at a time and do it to taste). Mix.
3. Drain your pasta reserving about 1/4 mug, and return the pasta to the pan. Add your mixture ensuring that it is thoroughly heated through on the lowest heat (keeping your eggs from scrambling toooo much is the trickiest part but the milk saves the mixture from becoming to sticky and you can always add a little extra where necessary.
4. Serve immediately! Season with salt and pepper, and smoked paprika if you like, as well as more grated cheese!
I hope that this has been an acceptable first post and that you enjoy this dish if you try to make it! Many of the ingredients can be swapped if you don't have them such as the type of cheese, and equally if you wanted to leave out one or two of nutmeg, mustard, or paprika that's fine two (though it might not be quite so flavourful).
